The most successful american style pancakes i have ever made so i had to save and share the recipe. They were such a good consistency to cook, they didn't stick to the pan at all - easy to flip and they stayed thick and fluffy!
I was sort of just experimenting, using the amounts of ingredients that i wanted too. Lots of recipes online will ask for more oil, yogurt and maple syrup but i
wanted to keep these reasonably low calorie!
- 50 g oats (blended first)
- 1 egg
- 1 tsp baking powder
- 15 g protein powder
- 1 teaspoon Vanilla extract/ sweetener - I use stevia vanilla drops from my protein.
- 50 g plain yogurt and another 100 g for the topping
- 10 g maple syrup - I would have used sugar free but i didn't have any.
This is for a decent sized serving for one person! Made 4-5 pancakes.
Blend up your rolled oats until they are powdery. I used an electric hand blender but a nutri bullet would also work well.
Add all the ingredients and blend together well - add dash of milk if it seems too thick and sticky.
fry on a greased frying pan on a medium to high heat for 2-3 minutes until the one side has cooked. Flip over ..... you know how to cook pancakes.
I like to cook all of them and then re heat them on the pan just before serving (this recipe made about 5 - but could make more or less depending how big you want them)
Because of the sweetener and maple syrup they are already really sweet and yummy but add any toppings you want. I added the other 100 g of yogurt (included in the nutritional information) and cinnamon.
